Date, Orange & Amaretto Cookies

Recipe

225g / 8oz Self-raising flour

Pinch of Salt

125g / 5oz Butter

75g / 3oz Caster sugar

25g / 1oz Dark brown sugar

1 egg, beaten

50g / 2oz Dates

1 tablespoon Amaretto

Zest of an Orange

1. cut up the dates into small pieces, place in a bowl and add the Amaretto.

Leave to soak for a while. If your dates are very dry you can leave soaking overnight.

2. Sift the flour and salt into a bowl.

3. Rub in the butter finely.

4. Add the white and brown sugar.

5. Add the dates with amaretto and the Zest of 1 orange.

6. Add the beaten egg and mix to a stiff dough.

7. Form the dough into a cylinder shape on a floured board.

8. Cut the roll into 2cm slices and place on an oiled baking sheet, flatten slightly.

9. Bake for 12 to 15 minutes at 180 degrees C.

When baked they are a light golden colour.

Leave on the trays a couple of minutes before transferring to a cooling rack.

Store any left after they are cool in an air tight box.

Make around 16 cookies.

No idea how long they keep as there are never any left after a couple of days.

Enjoy !
